Heat coconut oil in a saucepan over medium high heat. Add ginger and oats and toast for about 3 mins.*
Add the almond milk, turmeric, black pepper, sea salt, and cinnamon. Stir to incorporate and bring to a boil. Lower heat and simmer for 8-12 minutes, stirring in the maple syrup and vanilla at the end. Remove from heat and serve when desired consistency is reach.

*Alternatively, dry toast the oats for a couple of minutes and then add in the ginger with the almond milk.
