Tropical Fruit Sandwich with Creamy Vinaigrette (Vegan)

A vegan tropical fruit sandwich inspired by the famous tropical sandwich at Miami's La Sandwicherie. Soft baguette filled with papaya, pineapple, mango, cucumber, tomato, and tangy French pickles. Drizzled with a creamy French vinaigrette.

  • 1 large sandwich baguette
  • 1 Persian cucumber, sliced into rounds (or ½ English cucumber)
  • 1 cup fresh papaya, diced
  • 1 cup fresh pineapple, siced
  • 1 cup fresh mango, diced
  • 1 large tomato, diced
  • ½ avocado
  • Handful of cornichons
French Vinaigrette
  • 3 tbsp tahini
  • 2 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 2 tsp Dijon mustard
  • 2 tbsp water
  • 1 tsp agave or maple syrup
  • Salt & black pepper to taste
  1. Cut baguette into desired number of sandwiches and slice lengthwise. If there is not much area for filling on the baguette, scoop out a small amount of the bottom half to fill with toppings. Dice all the necessary fruits and set aside.
  2. Prepare the vinaigrette. In a small bowl, whisk tahini and vinegar together. Whisk in water to thin. Whisk in remaining ingredients until smooth, and add salt and pepper to taste.
  3. Spread vinaigrette over each half of each sandwich. Mash avocado onto the bottom layer of the sandwich. Fill with an assortment of mango, papaya, pineapple, cucumbers, tomatoes, and cornichons. Drizzle with extra vinaigrette. Serve immediately.
